OVER SEVEN NIGHTS, AND WITH JUST TWENTY-TWO GUESTS EACH EVENING, BALBOSTÉ INVITE US TO STEP INTO A DIMLY LIT, METICULOUSLY STAGED SPACE WHERE EVERY DETAIL AWOKE THE FIVE SENSES.
PLATES WERE CREATED IN COLLABORATION WITH SEVEN ARTISTS FROM AROUND THE WORLD, WITH EACH DISH FUNCTIONING AS BOTH A CULINARY COMPOSITION AND A SCULPTURAL WORK. TEXTURES, FLAVORS, AND INGREDIENTS MATERIALIZED IN PHYSICAL FORM: HAMMERED METALWORK CAPTURED THE DISH’S STRUCTURE AND TEXTURES, A FLUID WATER INSTALLATION MIRRORED AN ENTRÉE THAT WAS FRESH, LIGHT, AND FILLED WITH MOVEMENT, AND CARVED WOOD GROUNDED THE EVENING WITH DEPTH AND EARTHY WARMTH.
Balbosté transformed its Le Grand Atelier to conceive an intimate dining experience, where design, art, and gastronomy converged in perfect harmony.
Gathering seven international artists and designers, the space was transformed into an ephemeral experience that blurred the boundaries between culinary creativity and interior design.
